I love everything about the fall season. The sights, the colors and the bounty of the harvest. The fall foods warm up your belly and roots your soul back into itself as it prepares for colder days ahead. It finds me feeling inspired to eat it all up.
So get in the kitchen & whip up some yummy Butternut Squash Soup
1 Cup Butternut Squash (already cubed)
¼ cube yellow onion
1 Apple
1 Garlic clove
1 Ginger Clove
4 pcs Sage
1 Mint leaf
2 Sprigs of Thyme
1 tsp Himalayan pink sea salt (or Sea Salt)
1 tsp black pepper
1 tsp cinnamon
*½ cup Coconut Water
*½ cup Coconut Milk
*A word on Coconuts: I'm not a huge coconut lover but get the health factor & coconut craze so I'll use it as a base for soups & smoothies
1 tbspn EVOO
Squeeze of ½ Lemon & ½ Clementine
*Measurement note - I cook on feel & loathe anything math related so everything is approximate

Mix ingredients in food processor/Vitamix/blender
Serve hot or raw
Optional Toppings: if you like crunch...
Add the yummy crumbs from your bag of Raw Kale Chips (waste not want not!!)
Add Rice crackers
Little Sous Chefs: How to involve the kids
I love cooking with my kids and they are all over it.
Give the kids a not so sharp knife and let them peel & cut the apple, ginger.
They can pour in the
salt, pepper & cinnamon (my son is the cinnamon man)
I let mine press the button on the food processor & I talk them through each step of the cooking process and teach them about the flavors and the foods.
